A gingerbread man is an anthropomorphic (human-like) figure made of gingerbread.

In many fairy tales dating back as far as the 19th century, Gingerbread men "ran away" from various creatures or people who wanted to consume them.

Alternative shapes including "gingerbread women" and "gingerbread animals" are also gaining popularity.

According the Guinness Book of Records, the world’s largest gingerbread man weighed 168.8 kg (372.13 lb) and was made by chefs at the Hyatt Regency Hotel, Vancouver, Canada, on November 19, 2003. It measured 4.23 m (13 ft 11 in) in height, 1.72 m (5 ft 8 in) wide and 5.08 cm (2 in) deep. The record-holding cookie's total ingredients were:

  • 100 kg (220.46 lb) silver star flour
  • 1.6 kg (3.52 lb) baking soda
  • 1.6 kg (3.52 lb) sea salt
  • 20 kg (44 lb) shortening

The Gingerbread Man (1998) is also the title of a film directed by Robert Altman, starring Kenneth Branagh.
