Leaven is a raising agent for bread. It could be yeast, but it usually refers to a natural starter or sourdough starter or mother, all being names to a piece of dough which contain a symbiosis of wild yeast and various lactic acid bacteria. When cultured in cooler and wetter conditions, acetic acid bacteria are present (San Francisco sourdough).
