Mustamakkara Mustamakkara

Mustamakkara - Definition and Overview

Mustamakkara (black sausage) is a type of blood sausage. It is a local food specialty in Tampere, Finland and is traditionally eaten with lingonberry jam. The main ingredients are pork, pig blood and crushed rye. Mustamakkara is at its best when bought fresh from market stalls, to which it is delivered hot in styrofoam boxes directly after baking.

When buying mustamakkara, it is customary to specify the amount of money to spend instead of weight, length or number of pieces. Some Finns who are not native to Tampere refuse to eat the black sausage.

Three major producers of this food are Tapola (http://www.tapola.fi/) Savupojat (http://www.savupojat.fi/) and Teivon Liha (http://www.teivonliha.fi/).
