Poke salet are greens made from pokeweed that was a staple of Southern U.S. cuisine. It is often mispronounced as "poke salad." Young pokeweed leaves can be boiled twice to remove the toxin, discarding the water after the first boiling. The result is known as Poke salad.
However, some authorities advise against eating pokeweed even after twice boiling, as traces of the toxin may still remain. Campaigns by doctors against Poke salet in the mid and late 20th century led to a decline of its use in the U.S. South, though it is still occasionally available commercially. The lingering cultural significance of Poke salet can be seen in the recording of the song Polk Salad Annie by Tony Joe White.
