Root vegetable - Definition and Overview

Root vegetables, broadly speaking, are plants whose the underground parts (generally storage organs) are used as food. Many of them are not roots, botanically speaking. The potato, Jerusalem artichoke and ginger, for example, are underground stems, i.e. rhizomes or tubers.
