Sambar or Sambhar is an Indian dish, from southern India. It is a dish which is kind of spicy, and made up of thick gravy made of lentils, chillies, coriander seeds and other spices. Its ingredients consist of fresh vegetables , spices (red chilli, coriander seeds, channa dal, asafetida, fenugreek seeds), grated coconut, curry leaves and lentils. One of the three main courses of south Indian cuisine, it is served as the first dish along with boiled rice. The condiments for sambar are usually apalam or pachidi ( a form of yogurt salad).
