Sliced sausage - Definition and Overview |
Sliced sausage (often known as "square sausage", or "lorne sausage") is a delicacy most often enjoyed in Scotland. Sausage meat - mainly pork, but often mixed with beef, and other bulking content - is set into a square and sliced into pieces generally 3 inches square by about half-an-inch thick. The sausage is rarely a perfect square given the minced state of the meat.
Sliced sausage is a greasy food endemic of the meat-eating culture in Scotland which also gives rise to pies, haggis and ultimately heart disease.
However it remains a favourite in Scottish cooked breakfasts, most often eaten in a bread roll.
