Sweet woodruff (Galium odoratum, family Rubiaceae) has leaves that become very fragrant when dried, due to the presence of coumarin. It is used to flavor drinks and is mixed in white wine and beer, especially in Germany where it is also a popular flavoring used for jellies and desserts. White wine flavored with woodruff and berries is known as May wine. To make May wine, the blossoming Woodruffs are left in the sun to dry for a day before being left in the white wine overnight. Sweet woodruff is also an ingredient in some sausages.
The plant is a favorite ground cover in shady places. It has small white flowers and verticillate leaves.
