Tabouli - Definition

Tabouli (or tabouleh) is a Middle Eastern vegetarian salad. Its primary ingredients are typically bulgur, lemon juice, tomato, mint, parsley and other herbs. It is served cold.

Here is a typical recipe:

  • 2 cups of finely chopped flat-leaf parsley
  • ½ cup of finely chopped fresh mint
  • 4 finely chopped spring onions (with the green parts)
  • 4 ripe, medium size tomatoes, chopped into small cubes
  • 1 cup of medium burghul (cracked wheat): Prepare by pouring-in 4-cups boiling water and let stand 1-hour
  • ½ tsp allspice
  • ½ cup lemon juice
  • ½ jalapeno or green pepper, de-seeded, chopped fine (optional)
  • ½ cup cucumber (optional)
  • 5 tblspns of GOOD olive oil
  • salt and pepper to taste
