Ukrainian cuisine has a rich history and offers a wide variety of dishes, partly borrowed from other cuisines like german, turkish and polish. Cuisine of Ukraine has influenced the cuisines of neighbor, e.g. russian cuisine. Meat (especially pork), vegetables, fruit, mushrooms, berries, herbs play a major part.

Traditional dishes

Soup

  • borshch - beetroot soup, popular among eastern-slavic nations. There are more than 30 regional recipe of cooking Borscht.
  • kapusniak - sauerkraut soup.
  • rossolnik - soup with kidneys and pickles.
  • vushka - "little ears" are rolled triangular dumplings stuffed with mushrooms. Served in borshch at Christmas Eve dinner.

  • pyrohy or varenyky - dumplings
  • holubtsi - cabbage leaves stuffed with minced meat and rice, or buckwheat-stuffed beet leaves.
